Cheesy Breadsticks with Cauliflower Crust

Serves 12

Ingredients

  • 1 head cauliflower (7" - 8" wide)
  • 1/4 cup egg whites
  • 1/2 cup + 3/4 cup Mozzarella and shredded cheese blend
  • 1 tsp Italian herb seasoning (or any herbs like rosemary, basil, parsley)
  • 1/4 tsp freshly ground black pepper
  • Pinch of salt
  • Marinara sauce for dipping

Preparation

  1. Preheat oven to 375 F. Line a baking sheet with parchment paper.
  2. Rinse cauliflower, remove leaves, and separate into florets. Place florets into a food processor and process for a few minutes until it has a similar consistency to rice.
  3. Place cauliflower in a baking dish and bake for 20 minutes.
  4. Line a bowl with a linen towel, and place cooked cauliflower in the towel. Allow it to cool for about 15 minutes.
  5. Fold the towel up into a ball around the cauliflower, and squeeze the liquid out of the cauliflower ball as hard as you can. Repeat until there is barely any liquid coming out.
  6. Increase oven temperature to 450 F.
  7. Place drained cauliflower in a large mixing bowl, and combine with egg whites, 1/2 cup cheese, herb seasoning, black pepper and salt. Stir until fully combined.
  8. Place mixture on lined baking sheet and form it into a 9" x 7" rectangle, about 1/4" thick. Bake for 18 minutes.
  9. Sprinkle on remaining cheese, and bake for another 5 minutes.
  10. Broil briefly until cheese turns brown, if desired.
  11. Cut into 12 breadsticks and serve immediately with warm marinara sauce. Refrigerate up to two days.
