Cilantro Lime Quinoa

Serves 6

Ingredients

  • 1 tbsp canola oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup quinoa
  • 2 cups low-sodium, fat-free chicken broth (gluten-free if needed)
  • 2 limes
  • 1/2 cup fresh cilantro, chopped

Preparation

  1. Heat up oil in a large skillet over medium heat. Saute onions for 3 to 4 minutes.
  2. Add garlic and cook for 30 seconds. Lower the heat and add the quinoa. Continue to cook for 1-2 minutes.
  3. Mix in chicken broth and juice of 1 lime. Bring to a boil.
  4. Reduce heat to low, cover and simmer for about 15 minutes.
  5. Remove from heat and stir in juice of other lime and cilantro.
