Low-Carb Tiramisu with Greek Yogurt

Serves 10

Ingredients

  • 14 oz non-fat, plain Greek yogurt
  • 1 tsp cinnamon
  • 4 tsp vanilla
  • 2 tsp shaved chocolate
  • 1 cup strong brewed coffee
  • 1 tbsp dark rum (optional)
  • 45-50 reduced fat vanilla wafers
  • 6-8 oz light whipped topping

Preparation

  1. Mix together Greek yogurt, cinnamon, vanilla and chocolate. Freeze for 1 hour.
  2. Add rum to brewed coffee and stir well. Freeze for 30 minutes.
  3. Remove yogurt mixture and coffee mixture from freezer and stir each separately.
  4. In a 9x9 container or pan, begin layering by dipping vanilla wafers into the coffee mixture and then placing them flat into the pan, side by side. Add a few drops of the coffee mixture over the wafers if desired.
  5. Spoon in one layer of whipped cream and carefully spread it to cover all of the wafers.
  6. Sprinkle a thin layer of chocolate shavings on top of the whipped cream.
  7. Add another layer of coffee-dipped wafers.
  8. Spoon in one layer of the Greek yogurt mixture, using about 2/3 of it. Carefully spread the mixture over the wafers.
  9. Sprinkle a thin layer of chocolate shavings on top.
  10. Add another layer of coffee-dipped wafers.
  11. Spoon in remaining Greek yogurt mixture and whipped cream. Spread over the wafers, mixing as you do and creating a swirled look.
  12. Top with another thin layer of chocolate shavings. Freeze for one hour, then refrigerate until serving.
