Colorful Coleslaw

Serves 4

Ingredients

  • 1 cup thinly sliced green cabbage
  • 1 cup thinly sliced red cabbage
  • 1/2 cup precut matchstick carrots
  • 1 tbsp white wine vinegar
  • 1 tbsp olive oil
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • 1/2 tsp dried dill
  • 1/2 tsp salt
  • Dash of ground black pepper

Preparation

  1. Place the cabbage and carrots in a bowl, and toss until evenly distributed.
  2. Combine the remaining ingredients (for dressing) in a small bowl and stir to mix well.
  3. Pour the dressing over the salad and toss all together.
  4. Serve immediately or cover and chill until ready to serve.
