Veggie Pizza with Oat-Flax Crust
Serves 1
Ingredients
- Crust:
- 1/4 cup dry oats
- 1 Tbsp ground flax seed
- 1 egg
- Toppings:
- 1/2 cup non-fat or low-fat cottage cheese
- 4 Tbsp marinara or spaghetti sauce
- 1/2 cup chopped tomato
- Frozen spinach, thawed and patted dry
- Other vegetables of choice (mushrooms, onions, olives, jalapeno, etc.), chopped
Preparation
- Preheat the oven to 350 F.
- In a round tin pan, mix the crust ingredients together, then cover the bottom of the pan with the dough. Bake for 15-20 minutes or until the crust is firm.
- Using paper towels, soak any water out of the cottage cheese so it's as dry as possible (and won't make the pizza crust soggy).
- Spread the marinara or spaghetti sauce onto the firm crust, then top with cottage cheese, tomato, spinach and desired vegetables. Place the pizza back into the oven for another 15-20 minutes. (For crispier crust, increase the oven temperature to 375 F.)
