Cauliflower Salad(s)

p These recipes only gets better the next day. I suggest using all of a head of cauliflower. It will vary from 3-4 cups when cut up./p
h2Ingredients:/h2

li1 head cauliflower/li

pstrongMayonnaise based sauce:/strongbr /
For each ¼ cup of mayonnaise:/p
ul
li1 tsp. Dijon mustard/li
li½ tsp. apple cider vinegar/li
li1-2 stalks of celery, chopped/li
li½ red pepper, chopped/li
li1 tsp. fresh dill, chopped (can use ½ tsp. Dried)/li
li2 tsp. fresh parsley, chopped/li
liSalt and pepper to taste/li
li1 small shallot thinly sliced OR 2-3 scallions, sliced/li

liBring a pot of salted water to a boil./li
liMix all of the sauce ingredients together in a bowl./li
liCut Cauliflower into florets (about a ¾ inch cube). Place florets in boiling water and allow water to come back to the boil./li
liBoil cauliflower for 3 minutes and drain./li
liAdd cauliflower to sauce. Stir and allow to cool before refrigerating./li

For each ¼ cup of olive oil:/p

li1 tsp. Dijon mustard/li
li4 tsp. apple cider vinegar/li
li1-2 stalks of celery, chopped/li
li½ red pepper, chopped/li
li1 tsp. fresh dill, chopped (can use ½ tsp. Dried)/li
li2 tsp. fresh parsley, chopped/li
liSalt and pepper to taste/li
li1 small shallot thinly sliced OR 2-3 scallions, sliced/li
li¼ cup cooked bacon or pancetta (crumbled)/li
li¼ cup black olives, chopped (optional)/li

liBring a pot of salted water to a boil./li
liMix all of the sauce ingredients together in a bowl./li
liCut Cauliflower into florets (about a ¾ inch cube). Place in boiling water and allow water to come back to the boil./li
liBoil cauliflower for 3 minutes and drain. Add to sauce./li
liStir and allow to cool. Best served at room temperature or slightly warmed./li
