Balsamic Chicken and Broccoli Recipe

Serves 2

Ingredients

  • 1 tbsp olive oil
  • 2 cl garlic, minced

    1/2 small onion, chopped

    2 tbsp shallots

    1/4 cup white wine

    2 chicken breasts, cut into strips

    3 tbsp balsamic vinegar

    2 cup broccoli spears

    1 cup mushrooms (oyster or shittake)

    1/3 cup chicken stock

    1/4 tsp salt

    1 tsp black pepper

Preparation

  1. Heat oil in a heavy pot. Add garlic, onion, and shallots. Cook until light golden. Keep the pot covered between stirrings and use a tablespoon or so of the wine if more liquid is needed.
  2. Add chicken and enough wine to keep the meat from sticking to the pot. Cook until chicken is white all the way through, about 5 to 7 minutes (use more wine if needed).
  3. Remove chicken and vegetables with a slotted spoon. Add vinegar to the pot, increase the heat, and stir with a wooden spoon, scraping bits from the bottom, until the liquid is reduced by about half.
  4. Reduce heat. Return chicken and vegetables to the pot. Add broccoli, mushrooms, chicken stock, remaining wine, and salt. Simmer until broccoli turns bright green. (Optional: Serve over pasta or brown rice and dust with pepper.)
