1 tsp olive oil1 cup diced onion2 tbsp chopped garlic2 cup diced carrots4 cup dried lentils, preferably le puy2 sprigs fresh thyme1 bay leaf1/8 tsp ground cloves1 salt and pepper

Preparation:

Heat the oil in a large skillet over medium heat. Add the onion and garlic,saute until tender and translucent. Add the carrot and continue to cook,stirring frequently, until lightly carmelized. Add the lentils, thyme, bayleaf, and cloves, and cover with 1" of water. Reduce the heat and simmerfor 15-20 minutes, until tender. Add more water as needed. Remove fromheat.
