Black Beans & Rice Recipe from the diabetic recipe collection at InformationAboutDiabetes.comIngredients:

5 tbsp olive oil1 medium onion, chopped1 medium green bell pepper, diced2 garlic cloves, chopped2 1/2 cup cooked black beans2 cup rice4 1/2 cup water2 tsp salt1 bay leaf2 tbsp olive oil1/4 tsp cumin1 black pepper to taste

Preparation:

In a large pot, heat oil till fragrant. Add onion, bell pepper & garlic &cook till tender, about 8 minutes. Add the remaining ingredients & cookover medium-high heat until all the water has been absorbed. It should take15 minutes or less.
