2 cup Water2/3 cup Barley, uncooked quick- cooking b2 cup Chicken, diced cooked1/2 cup Celery, diced1/2 cup Tomatoes, chopped1/2 cup Red onion, chopped2 tbsp Lemon juice, fresh1 tbsp Dijon mustard5 Lettuce, leaves

Preparation:

Bring water to a vigorous boil in a medium saucepanover high heat. Stir in barley; return to a boil.Reduce heat, cover, and simmer 8-10 minutes or untilbarley is tender, stirring occasionally. Drain ifnecessary; cool. Toss barley with remainingingredients excpt lettuce.
