Diabetes-Friendly Pumpkin Cheesecake

li2 cups ground nuts (almond or pecan recommended)/li
li1 1/4 cups Splenda (or other sugar substitute), divided/li
li6 Tbsp butter, melted/li
li24 ounces (three 8-ounce packages) cream cheese, softened/li
li1 tsp vanilla extract/li
li3 Tbsp sour cream/li
li1 Tbsp pumpkin pie spice/li
li4 eggs + 1 egg yolk, room temperature/li
li1 (15-ounce) can pumpkin puree/li

liPreheat oven to 350 F./li
liMix ground nuts, 1/4 cup Splenda, and butter in a bowl. Press crust mixture into the bottom of a springform pan, and bake for 20 minutes./li
liLower the oven temperature to 300 F./li
liUsing an electric mixer, combine the cream cheese and 1 cup of Splenda on medium speed. Add vanilla, sour cream, and pumpkin pie spice, then combine until smoothly mixed./li
liAdd the eggs and egg yolk one at a time, combining into the mixture on low speed./li
liFold pumpkin into the batter until blended. Do not over mix./li
liGently add the pumpkin batter to the pan over the cooked crust. /li
liPlace the pan on a large piece of aluminum foil, and fold the foil around the sides and top of the pan to keep water out. Fill a larger pan or dish halfway with water, and place the aluminum-wrapped pan into the water bath./li
liBake for 1 hour, then reduce the heat to 200 F and continue to bake for 1 more hour./li
liTurn oven off and allow cheesecake to completely cool inside the oven. It can be left overnight to cool./li
liRemove the cheesecake gently from the pan, and let it sit in the refrigerator for several hours, or overnight./li
