pEMFive Grain Pilaf Recipe from the diabetic recipe collection at InformationAboutDiabetes.com/emIngredients: /pP1 cup currants1/4 cup fresh orange juice1 tsp olive oil1 tsp garlic, minced1/2 cup onion, finely chopped2 cup mushrooms, sliced1 cup barley1/2 cup soft winter wheat berries1/4 cup millet1/4 cup wild rice1/4 cup brown rice3 cup chicken broth1 cup scallion, chopped1 cup slivered almonds, toasted1 cup italian parsley, minced1 salt and pepper/pPreparation: PPreheat the oven to 350. Plump the currants in the orange juice for 20minutes. In a large Dutch oven with a tight fitting lid, heat the olive oilover medium heat. Add the garlic and onion and saute for 5 minutes. Add themushrooms and saute for 3-5 minutes, until softened. Add the barley, wheatberries, millet, wild and brown rice. Stir to coat with the oil and cook,stirring, for 10-15 minutes. The grains should be soft to the tooth. Stirin the chicken brothand bring to a boil. Cover and place in oven; bake for30 minutes. Remove the pilaf from the oven; stir in the scallion, currantsand soaking liquid, toasted almonds, and parsley. Season with salt andpepper to taste.
