pEMGoulash Soup Recipe from the diabetic recipe collection at InformationAboutDiabetes.com/emIngredients: /pP2 cup onions, chopped3 tbsp vegetable oil1 lb ground round8 cup fat-free broth1/4 tsp garlic powder2 tsp paprika1/2 cup tomatoes, canned crushed drained1 salt to taste/pPreparation: PBrown onions in 2 tb vegetable oil in a heavy frying pan over moderateheat, stirring occasionally. Transfer onions with a slotted spoon to aheavy saucepan. Add remaining tablespoon of oil to frying pan. Trim allvisible fat from the beef and cut into 3/4" cubes. (This is easier if themeat is slightly frozen.) Brown beef in the frying pan over moderate heat,stirring occasionally. Transfer meat with a slotted spoon into spoon intosaucepan with the onions. Discard as much fat as possible from the fryingpan. Add broth to frying pan and cook and stir over low heat to get asmany of the brown particles in the pan as possibe into the broth. Pour thehot broth into saucepan with the onions and meat. Add seasoning andtomatoes to meat and broth. Cover and simmer over low heat until meat istender. Remove from heat. Cool to room temperature. Refrigerate untilthoroughly chilled and the fat has risen to the top. Remove the fat anddiscard it. Return the soup to heat. Taste for seasoning and salt ifnecessary. Add potaoes to soup. Cover and simmmer 15-20 minutes or untilpotatoes are tender. Serve 1 cup hot soup per serving.
