High Fiber Cookies Recipe

li1 cup Oat bran/li
li1 cup Rolled oats/li
li1 cup Fiber One cereal/li
li1 cup Kellog's Bran Flakes/li
li1 cup Seedless raisins/li
li1 cup Chopped walnuts/li
li3/4 cup Artificial sweetener/li
p*Note: Not all artificial sweeteners keep their sweeteness when baked at high temperatures for a long period of time. Ones such as Acesulfame-K, Splenda and Sweet-n-Low would work OK in this recipe, Equal or Aspartame probably would not./p
li3/4 cup Brown artificial sweetener or brown sugar (Splenda has a brown sweetener version)/li
li1 cup Low-fat or reduced-fat margarine (2 sticks)/li
li2 Large egg whites/li
li2 tsp Vanilla/li
li2 cup All-purpose flour/li
li1 tsp Baking powder/li
li1 tsp Baking soda/li
li1/2 tsp Salt/li
li1/2 cup Water at room temperature/li

liPlace oat bran, rolled oats, Fiber One, bran flakes, raisins and walnuts in a bowl./li
liMix lightly and set aside./li
liPlace sweeteners/sugars and margarine in mixing bowl and mix at medium speed until light and fluffy./li
liAdd egg whites and vanilla and mix lightly, scraping the bowl before and after adding the egg whites./li
liIn a separate bowl, combine flour, baking powder, baking soda and salt and mix at low speed about 1/2 min to blend well./li
liAdd flour mixture and water to sweetener/sugar mixture and mix at medium speed only until flour is moistened./li
liAdd bran mixture and mix at medium speed until well blended./li
liDrop by heaping tablespoonfuls onto a cookie sheet that has been sprayed with cooking spray or lined with aluminum foil./li
liBake at 375 F for 12-14 minutes or until lightly browned. Remove from oven and let sit for 1 minute./li
liRemove cookies to wire rack and cool to room temperature./li
p*Author’s Note: These cookies, which provide 2 grams of dietary fiber each, aren't terribly sweet. If you prefer them sweeter, you can add more sweetener and this will not result in major changes of the nutritive values.
