pEMOrange-Sauced Chicken Stir-Fry Recipe from the diabetic recipe collection at InformationAboutDiabetes.com/emIngredients: /pP3/4 lb Chicken breast breast boned skinles1 cup Unsweetened Orange juice1 tbsp Cornstarch1 tbsp Dry sherry1 tbsp Tamari or soy sauce1/2 tsp Ground gingerNonstick spray coating4 cup Broccoli flowerets1/2 cup Onion, sliced1 tbsp Cooking oil1 1/3 cup Brown rice, cooked hot1/2 Orange, sliced/pPreparation: PRinse chicken; pat dry. Cut the chicken into 1"pieces. Set aside. For sauce, stir together orangejuice, cornstarch, sherry, tamari sauce, and groundginger. Set aside. Spray a cold work or large skilletwith nonstick coating. Preheat wok or skillet overmedium heat. Add broccoli and onion; stir-fry for 2or 3 minutes. Remove vegetables. Add oil to wok orskillet. Then, add chicken; stir-fry for 2 to 4minutes or till tender and no longer pink. Pushchicken from center of wok or skillet.Stir sauce; add to the center of the wok or skillet.Cook and stir for 2 minutes more. Return vegetables towok or skillet; stir all ingredients together to coatwith sauce. Serve immediately over rice. Garnich worange slices.
