Flourless Honey Almond Cake

li1 1/2 cups whole almonds/li
li1/4 cup sliced almonds/li
li4 large eggs, yolks separated from whites/li
li1/2 cup + 2 tbsp honey, divided/li
li1 tsp vanilla /li
li1/2 tsp baking soda/li
liDash of salt/li

liToast whole almonds by spreading on a baking sheet and baking at 350 F, stirring once, for 7 to 9 minutes. /li
liToast sliced almonds by heating in a dry skillet over medium or low heat, stirring constantly, until fragrant and lightly browned, 2 to 4 minutes./li
liPreheat oven to 350 F./li
liCoat a 9-inch springform pan with cooking spray. Place parchment paper on tray as lining and spray with cooking spray./li
liProcess toasted whole almonds in a food processor or blender until finely ground./li
liBeat 4 egg yolks, 1/2 cup honey, vanilla, baking soda and salt in a large mixing bowl with an electric mixer on medium speed until well combined. Add the ground almonds and beat on low until thoroughly mixed./li
liBeat 4 egg whites in another large bowl with the electric mixer on medium speed until foamy, white and doubled in volume (but not too stiff). Using a rubber spatula or spoon, gently fold the egg whites into the nut mixture until evenly mixed. Scrape the batter into the prepared pan./li
liBake the cake at 350 F for about 30 minutes or until golden brown. (A skewer inserted should come out clean.) Let cake cool in the pan for 10 minutes, then slide out of pan using a knife. Let cool completely./li
liCarefully transfer the cake to a serving platter. To serve, slice cake and drizzle the top with honey and sprinkle with sliced almonds./li
