pEMSzechwan Bean Curd Recipe from the diabetic recipe collection at InformationAboutDiabetes.com/emIngredients: /pP4 oz 85% lean ground beef1 cup Green onions, with tops chopped1 cl Garlic, minced3/4 cup Chicken broth2 tbsp (light) Soy sauce reduced sodium1 tbsp Chile sauce1 tsp Seasame oil1/4 tsp Hot oil, (optional; see below)1/4 tsp Red pepper flakes2 tbsp Cornstarch2 tbsp Water1 cup Bean curd(tofu), cut into 1/2-inch cubes/pPreparation: PPlace ground beef, green onions, and garlic in anonstick skillet and cook, stirring quickly, untilbeef is browned. Stir in chicken broth, soy sauce,chili sauce, oils, and red pepper flakes. Mixcornstarch with cold water. Add to skillet. Cook.stirring constantly, untill sauce thickens. Gentlystir in bean curd. Contiune to cooking over mediumheat 3 minutes.
