li1 cup Bulgur Wheat/li
li2 cups Water, boiling/li
li2 Tomatoes, finely diced/li
li1 bunch Green Onions, sliced/li
li3 tsp Mint, freshly chopped -or- 2 tbsp Mint, dried/li
li2 cups Parsley, freshly chopped fine/li
li1/2 cup Lemon Juice, freshly squeezed/li
li1/4 cup Olive Oil/li

h3Preparation:/h3

liPlace uncooked bulgur in a bowl; pour boiling water over it and let it soak 1 hour (stir occasionally)./li
liDrain well in a fine strainer./li
liReturn bulgur to the bowl and add all other ingredients; mix well./li
liChill for 2 hours. Serve with Toasted Pita Chips/li
