Crawfish Etouffee

li2 tsp salt/li
li2 tsp ground cayenne pepper/li
li1 tsp white pepper/li
li1 teaspoon ground black pepper/li
li1 tsp dried basil/li
li½ tsp dried thyme /li
li¼ cup chopped onions/li
li¼ cup chopped celery/li
li¼ cup chopped green bell peppers/li
li7 tbsp canola oil/li
li¾ cup all-purpose flour/li
li3 cups basic Seafood Stock/li
li½ pound (2 sticks) unsalted butter/li
li2 pounds crawfish tails (peeled) or medium shrimp/li
li1 cup minced green onions/li
li4 cups cooked white rice/li

liMix togeher the seasoning ingredients in a small bowl and set aside. In a separate bowl combine the chopped onions, celery and bell peppers./li
liIn a large nonstick skillet, heat the oil over high heat about 4 minutes. With a long-handled metal whisk, gradually stir in the flour, mixing well until smooth. Continue cooking, whisking often, until mixture is dark red-brown. This takes about 3 to 5 minutes./li
liRemove from heat and immediately stir in the vegetables and 1 tbsp of the seasoning mix. Continue stirring until cooled, about 5 minutes./li
liIn a large saucepan bring 2 cups of the stock to a boil over high heat. /li
liGradually add the seasoning mixture and whisk until thoroughly dissolved. Reduce heat to low and cook about 2 minutes, whisking constantly. Remove from heat and set aside./li
liIn a 4-quart saucepan melt 1 stick of the butter over medium heat. Stir in the crawfish (or shrimp) and the green onions; sauté about 1 minute, stirring almost constantly. /li
liAdd the other stick of butter, the stock mixture and the remaining 1 cup stock; cook until butter melts and is mixed into the sauce, about 4 to 6 minutes, constantly shaking the pan back and forth. Add the remaining seasoning mix; stir well and remove from heat. Serve immediately./li
