Vegetable Pilaf Recipe

pEMVegetable Pilaf Recipe from the diabetic recipe collection at InformationAboutDiabetes.com/emIngredients: /pP1 cup Long-grain rice1 tbsp Betty's butter1 Shallot, minced2 Green onions, chopped1 Carrot, sliced1/2 cup Snow peas, sliced1/2 cup Mushrooms, sliced2 tbsp White wine1 1/2 cup Chicken/Vegetable stockSalt or pepper to taste2 tbsp Toasted sesame seeds/pPreparation: PSoak rice 2 hours to shorten cooking time. Rinse and drain. In amedium-size non-stick saucepan, heat butter and saute shallot untilsoftened. Add vegetables and saute about 3 minutes. Add rice tovegetables; stirring to coat. Cook about 2 minutes. Stir in winebroth; bring to a boil. Reduce heat, cover and simmer about 25minutes, until rice is tender and liquid is absorbed. Remove fromheat and fluff with a fork. Season with salt and pepper. Garnishwith seasame seeds.
