White Bean Soup Recipe

pEMWhite Bean Soup Recipe from the diabetic recipe collection at InformationAboutDiabetes.com/emIngredients: /pP1/4 cup Onion, chopped1/2 tsp Garlic, minced3 tbsp Olive oil, divided1/2 lb Dry great nothern beans washed2 qt Water2 Bay leaves, large1 tsp Dried basil1 /2 s Salt1 /2 s White pepper, ground2 tbsp Parsley, fresh chopped2 Green onion, chopped/pPreparation: PSaute onion and garlic in 2 tablespoons of olive oiluntil soft, stirring often. Add bean, water, bayleaves, and basil. Bring mixture to a boil, reduce toa simmmer, and cover. Continue cooking until beans aretender, about 2 hours, adding more liquid if necessaryand stirring occasionally. Season with salt andpepper. Cool soup, puree beans in a blender or foodprocessor fitted with steel blade. Return pureed soupto pot; reheat over moderate heat. stirring often.Blend in remaining olive oil. Serve soup hot,garnished with chopped parsley and green onions.
