Cashew Chicken Lettuce Wraps
Serves 8
Ingredients
- 2 Tbsp light soy sauce
- 1 Tbsp honey
- 1 Tbsp chili garlic sauce
- 1 Tbsp rice vinegar
- 1 tsp grated ginger
- 2 cloves garlic, minced
- 1 tsp toasted sesame oil
- 2 Tbsp peanut or olive oil
- 1 lb boneless, skinless chicken breasts, cut into 1/2-inch cubes
- 1/2 cup cashews, roughly chopped
- 8 leaves butter-leaf lettuce
- 1/2 cup bell pepper, cut in thin slices
- 1/4 cup cilantro, finely chopped
Preparation
- Whisk together soy sauce, honey, chili garlic sauce, rice vinegar, grated ginger, garlic, and sesame oil to create a sauce.
- Heat the peanut or olive oil in a skillet. Add the chicken and stir-fry for about 8-10 minutes until fully cooked and no longer pink.
- Add the sauce to the skillet, mix together, and allow to simmer for 3-4 minutes, stirring often. Add cashews and combine. Remove from heat and allow to cool slightly.
- To assemble the wraps, scoop chicken into the lettuce leaves and top with bell pepper and cilantro. Serve immediately.
