Jamaican Jerk Chicken
Serves 6
Ingredients
- 6 chicken breasts (boneless and skinless), cut in halves
- 4 tsp Jamaican jerk seasoning
- 8 cloves garlic, minced
- 2 tsp thyme or 1/2 tsp dried thyme, crushed
- 2 tsp lemon zest (1/2 lemon's worth)
- 2 tbsp lemon juice
- 2 tsp olive oil
- 6 lemon wedges
Preparation
- Put a chicken breast (halved) between sheets of plastic wrap. Hammer gently with the flat side of a meat mallet until breast is an even 1/2 inch thickness. Repeat with remaining chicken pieces.
- In a bowl, mix jerk seasoning, garlic, thyme, and lemon peel. Brush chicken breasts with lemon juice. Toss garlic mixture evenly over chicken breasts; rub in with your fingers.
- Put chicken pieces in a resealable plastic bag; seal within bag. Chill in the refrigerator for 30 minutes to 24 hours.
- After cooling, brush chicken breasts lightly with olive oil.
- Preheat an indoor electric grill. Place chicken on the grill rack. Grill pieces until chicken is tender and no longer pink. (For a covered grill, allow 5 minutes to fully cook chicken. For an uncovered grill, allow up to 10 minutes, turning once halfway through grilling.)
- Slice chicken and serve hot with lemon wedges.
