Ham, Egg and Spinach Breakfast Sandwich
Serves 4
Ingredients
- 4 slices deli-style smoked ham (0.5 oz each)
- 1 tbsp olive oil
- 4 cups baby spinach
- ¼ tsp garlic powder
- ¼ tsp ground black pepper
- 4 eggs
- 4 tsp grated Parmesan cheese
- 4, 1½-oz whole-wheat sandwich thins, toasted
Preparation
- Spray a nonstick, oven-proof skillet with cooking spray and heat over medium heat. Add ham slices and cook for 1 minute per side. Remove from pan and set aside.
- Add olive oil to pan, then add spinach and sprinkle with garlic powder and pepper. Sauté until spinach is wilted. Remove from pan and set aside.
- Crack the eggs into the pan, then break each yolk to make it run. Cook until egg starts to firm, about 30-60 seconds, then flip. Sprinkle each egg with 1 tsp Parmesan cheese. Cook until done.
- Top each egg with 1 ham slice and a spoonful of cooked spinach, then place on toasted sandwich thin and top with other slice of sandwich thin.
