Blueberry Muffins Recipe
Serves 12
Ingredients
- 1 3/4 cups all-purpose flour
- 3 tbsp sugar
- 3 tbsp sugar substitute
- 2 tsp baking powder
- Dash of Salt
- 1/2 tsp ground allspice
- 1 cup fresh blueberries
- 3/4 cup skim milk
- 1/4 cup vegetable oil
- 1 egg, lightly beaten
- 1 tsp grated lemon rind
- 1 tsp grated orange rind
- 1 tsp vanilla extract
- cooking spray
Preparation
- Preheat oven to 400 degrees.
- Combine flour, sugar, sugar substitute, baking power, salt, and allspice in a medium bowl. Add blueberries, and toss to coat. Make a dip with a spoon in center of flour mixture.
- Combine milk and next 5 ingredients and add to flour mixture. Stir until mixture in moistened.
- Spoon batter into muffin pans coated with cooking spray, filling each tin two-thirds full.
- Bake at 400 degrees for 20 to 25 minutes or until golden.
- Remove muffins from pans immediately, and let cool on wire racks.
