Confetti Rice Recipe

Confetti Rice Recipe from the diabetic recipe collection at InformationAboutDiabetes.comIngredients:

1 tbsp Virgin olive oil1 small Onion, chopped3/4 cup Brown basmati rice soaked 2 hours1/4 cup Dry white wine1/4 tsp Dried leaf thyme, crushed1/8 tsp Pepper2 cup Chicken broth OrVegetable stock1/2 cup Dice red bell pepper2 tbsp Grated Parmesan cheese

Preparation:

In a medium-size non-stick saucepan, heat oil, heat oil and sauteonion until softened. Rinse and drain rice. Add to saucepan andbrown. Add wine, thyme, pepper and broth, bring to a boil. Reduceheat, cover and simmer 15 to 20 minutes until rice. Add peas andbell pepper. Cook, stirring occasionally, until all liquid isabsorbed, about 5 minutes.
