1 tbsp vegetables oil, +1 tsp vegetable oil1/4 cup onion, chopped1/4 cup green pepper, chopped1/4 cup celery, chopped1/4 cup carrots, chopped1 cl garlic, minced2/3 cup lowfat cottage cheese10 oz (1 cn) tomatoes1/2 cup water1/8 tsp dried thyme1/2 tsp dried oregano1/4 tsp dried basil1 salt and pepper to taste1 cup cooked brown rice

Preparation:

Heat oil in saucepan. Cook onion, pepper, celery, carrots, and garlic andcook until lightly browned, adding water if necessary to prevent drying. Inblender, combine cottage cheese, tomatoes, water and spices. Blend untilsmooth and add to vegetables. Stir in rice, cook, stirring until heatedthrough. Do not boilPer serving: 7g protein, 6g fat, 21g carb., 348mg sodium, 2mg chol., 159calories.
