Gyros - Diabetic Recipe

h3Gyros Ingredients/h3

li2 lb Lean or extra-lean ground beef or lamb or both/li
li4 Green onion, finely chopped/li
li1 clove Garlic, minced/li
li1 tsp Oregano/li
li1/4 tsp Cumin/li
li1/4 tsp Parsley/li
li1 tsp Salt/li
li1/4 tsp Pepper, freshly ground/li
li8 Whole-wheat pita/li

h3Preparation for Gyros/h3

liMix all ingredients except pita./li
liKnead until mixture is stiff./li
liPack meat mixture on skewer in 5" long sections, not more than 2" in
diameter./li
liPut as many "meat fingers" as possible on a skewer, leaving a 1" space in between./li
liCook over hot coals for 10-15 minutes, turning frequently./li
liTake pita and slide gyro into center./li
liDrizzle with sauce and fold over to eat./li

li1 cup Low-fat, sugar-free yogurt/li
li1 tbsp Low-fat mayonnaise/li
liJuice of 1 lemon/li
li2 Scallions including green tops, finely chopped/li
liCucumber, minced /li
li5 cloves Garlic, minced/li
