Irish Soda Bread Muffins Recipe

li3/4 cup raisins/li
li4 tsp. caraway seeds/li
li5 cups unbleached white flour/li
li1 tsp. baking soda/li
li1 1/2 tsp. baking powder/li
li3/4 tsp. salt/li
li3/4 cup cold butter/li
li6 tbsp. fruit sweetener/li
li1 1/3 cups buttermilk/li
li1 cup unsweetened applesauce/li
li2 eggs/li

liBegin by plumping the raisins./li
liBring 1 cup water to a boil, add the raisins, when the water returns to a boil, turn the heat off. Let the raisins plump for at least 10 minutes. Drain the raisins, saving the raisin water for another use. Set the raisins aside./li
liPreheat the oven to 350 degrees, lightly spray a regular size muffin tin with lecithin spray./li
liCut the cold butter into 1/2 inch pieces. /li
liSift the dry ingredients together into a medium size mixing bowl or the mixing bowl of an electric mixer./li
liWith the mixer on its lowest spead use the paddle attachment or your beaters to cut the cold butter into the dry ingredients until the mixture resembles coarse cornmeal./li
liStir in the plumped raisins and the caraway seeds./li
liIn a small bowl, whisk the sweetener, buttermilk, applesauce, and eggs, and add to the flour mixture./li
liStir together on medium low speed just until mixed./li
liUse a rounded #12 scoop (1/2 cup) to place the batter into the prepared muffin tins./li
liBake the muffins on the middle shelf of the preheated oven for 30-35 minutes./li
liTurn muffin tins once if necessary for the muffins to brown evenly./li
liLet the muffins cool in the pan for 5 minutes before removing them to a wire rack to cool completely./li

h3Some healthy substitution suggestions:/h3
/pp You can use half whole wheat flour and half white flour. Lower-fat margarine can be used in the place of butter. Use a non-nutritive sweetener in place of the fruit sweetener in appropriate amounts. Low-fat buttermilk can be substituted for the full-fat buttermilk.
