pEMLamb Chops With Orange Sauce Recipe from the diabetic recipe collection at InformationAboutDiabetes.com/emIngredients: /pP1/2 cup unsweetened orange juice1 tbsp orange rind1/2 tsp dried thyme8 lean lamb chops, about 1/2 inch - thick1 tbsp low calorie margarine1 cup fresh mushrooms, sliced1/2 cup dry white wine/pPreparation: PIn a shallow baking dish, combine the orange juice, orange rind, thyme andpepper to taste; mix well. Trim all excess fat from lamb chops and place ina baking dish. Spoon orange juice mixture over chops; cover andrefrigerate 3-4 hours, occasionally turning chops. Coat a large skilletwith nonstick cooking spray; place over medium high heat until hot. Removethe chops from the marinade, reserving marinade; arrange in the skillet.Brown chops on both sides, remove from skillet and drain. Reduce heat tomedium and melt margarine. Add mushrooms and saut? until just tender. Stirin reserved marinade and wine and bring to a boil. Return lamb chops toskillet; cover, reduce heat and simmer 10-12 minutes or until sauce isreduced to about 1/2 cup.
