pEMMediterranean Chicken Recipe from the diabetic recipe collection at InformationAboutDiabetes.com/emIngredients: /pP2 tsp olive oil2 tbsp dry white wine3 whole boneless skinless chicken breasts, halved3 cloves garlic, minced1/2 cup diced onion3 medium tomatoes, coarsely chopped2 tsp minced thyme1 tbsp minced basil1/2 cup dry white wine1/2 cup kalamata olives1/4 cup minced italian parsleyfresh ground pepper1 dash salt, optional/pPreparation: PHeat the oil and wine in a heavy skillet over medium heat. Add the chickenbreasts and saut? until golden on each side, about 4 to 6 minutes a side.Remove the chicken from the skillet.Saut? the garlic for 30 seconds in the pan drippings. Add the onion andsaut? for 3 minutes. Add the tomatoes and bring to a boil.Lower the heat, add the wine, and simmer for 10 minutes. Add the thyme andbasil and simmer for 5 minutes.Return the chicken to the skillet and cover. Cook over low heat until thechicken is cooked through.Add the olives and parsley and cook 1 minute.
