A Delicious Oatmeal Blueberry Muffins Diabetic Recipe
Serves 12
Ingredients
- 1 cup all purpose flour (1/2 cup whole-wheat, 1/2 cup white flour)
- 1 cup skim milk
- 3/4 cup uncooked regular oats
- 1 egg
- 1 tbsp baking powder
- 1/4 cup vegetable oil
- 2 tbsp sugar sub. (or equivalent of 2 tbsp reg. sugar)
- 1 cup fresh blueberries
- 1/2 tsp salt
- 1 vegetable cooking spray
- 1 tsp ground cinnamon
Preparation
- Combine flour, oats, baking powder, sugar substitute, and salt in a medium bowl.
- Make a well in center of mixture.
- Combine milk, egg, and oil; add to dry ingredients, stirring just until moistened.
- Gently fold in blueberries.
- Spoon batter into muffin pans coated with cooking spray, filling two-thirds full.
- Sprinkle cinnamon over muffins, and bake at 425 F for 20 to 25 minutes or until lightly browned.
