Heat oven to 350?F. Lightly coat a 9x5-inch loaf pan with vegetablecooking spray. Sift together flour, salt, baking powder and baking soda inmedium bowl; set aside.2. With vegetable peeler or small, sharp knife, remove peel from orange;coarsely chop the peel. Cut orange in half and squeeze 1?4 cup juice.Process sugar and peel in food processor, pulsing until peel is finelychopped. Combine buttermilk, orange jui!ce and vanilla in a glass measuring cup.3. Beat butter and orange-sugar mixture in a large mixer bowl onmedium-high speed until combined. Beat in egg and egg whites, 1 at a time,beating well after each addition.
