pEMPecan Waffles - Sugar Free Recipe from the diabetic recipe collection at InformationAboutDiabetes.com/emIngredients: /pP1 3/4 cup all-purpose flour1 tbsp baking powder1/2 tsp salt2 eggs, separated1 3/4 cup milk1/2 cup vegetable oil1 cup chopped pecans1/4 cup sugar substitute, optional*1 tsp vanilla, optional*diabetic maple syrup/pPreparation: PIn a bowl, combine flour, baking powder and salt. Combine egg yolks, milkand oil; stir into dry ingredients. Beat egg whites until stiff; fold intobatter. Add sugar substitute and vanilla; stir. Sprinkle hot waffle ironwith 2 tablespoons pecans. Pour 1/4 to 1/3 cup of batter over pecans andbake according to manufacturer's directions until golden brown. Repeatwith remaining pecans and batter. Serve with syrup. Yield: 8-10 waffles(4-1/2 inches).
