Cook over mediumheat, stirring constantly, until mixture thickens andstarts to boil. Remove from heat. Place pan on a wirerack and allow to cool completely. In a medium bowl,stir cream cheese with a spoon until soft. Stir insugar substitute and coconut extract. Add cooledpineapple mixture. Mix gently, but thoroughly. Evenlyspoon mixture into crusts. Top each with 1 tablespoonCool Whip Lite. Cut cherry in half and each half into3 pieces.
