Black Bean Southwestern Pizza

li2 tsp olive oil/li
li3/4 cup of your favorite salsa/li
li1 8 oz can black beans (no salt added), rinsed and drained/li
li3/4 cup bell pepper strips, any color/li
li1 fresh jalapeño pepper, seeded and cut into strips* (optional)/li
li1 cup shredded Mexican cheese blend (low fat)/li
listrongFor Whole Grain Pizza Crust:/strong/li
li1 1/4 - 1 1/2 cups bread flour or all-purpose flour/li
li3/4 cup whole wheat flour/li
li1/4 cup cornmeal/li
li1/4 cup flax seed meal/li
li1 tsp active dry yeast/li
li1 tsp kosher salt/li
li1 cup warm water (not boiling)/li

liIn a large mixing bowl, blend 1 cup of the bread flour, the whole wheat flour, cornmeal, flax seed meal, yeast, and salt. Add water, stirring until combined and a doughy texture. /li
liPlace dough on a flat floured surface. Knead in remaining 1/4 to 1/2 cup bread flour until dough is moderately soft, smooth, and stretchy (3 to 5 minutes total kneading)/li
liShape pizza dough into a ball. Place in a lightly greased bowl, turning once to grease surface of dough on all sides. Cover with cloth and let rise until dough is doubled in size (up to 3 hours)./li
liPunch pizza dough down. Place on lightly floured surface. Divide into two portions. Cover and let halves rest for 10 minutes. Use as directed in individual pizza recipes. /li
liPreheat oven to 425 degrees F. /li
liTransfer rolled out dough to the prepared baking sheet. Bake for 6 to 8 minutes or until crust is lightly browned./li
liLightly brush 1 inch of the edge of hot crust with olive oil. Spread your favorite salsa over crust to within 1 inch of the edge. Sprinkle with black beans, sweet pepper, and, if desired, jalapeno pepper; top with cheese./li
liBake pizza for 6 to 8 minutes more or until cheese is melted and toppings are heated through./li
