pEMRaisin Cake Recipe from the diabetic recipe collection at InformationAboutDiabetes.com/emIngredients: /pP2 cup Water1 cup Reduced-cal margarine15 oz (1)pkg raisinsSugar sub to equal 3 cups sugar2 tsp Baking soda1/4 cup Water2 Eggs, beaten4 1/2 cup All-purpose flour1 tsp Ground cloves1 tsp Allspice1 tsp Ground cinnamonVegetable cooking spray/pPreparation: PBring 2 cups of water to a boil n a large saucepan; stir in margarineand raisins, and boil uncovered 5 minutes. Remove from heat, and coolraisin mixture to lukewarm. Stir in sugar substitute. Dissolve sodain 1/4 cup of warm water; add to raisins mixture, stirring well.Stir in eggs. Combine flour, cloves, allspice, cinnamon, and bakingpowder; gradually add to raisins mixture, stirring after eachaddition. Stir in eggs. Spoon batter into 10" Bundt pan coated withvegetable cooking spray. Bake at 350 degrees for 50 minutes to 1 houror until a wooden pick inserted in center comes out clean. Cool cakein bundt pan 10 minutes.
