Tangy Fish Kabobs Recipe

li8 oz fresh fish filets (if using frozen, thawed and drained)/li
li1 tbsp extra-virgin olive oil/li
li1 tbsp lemon juice/li
li2 tsp fresh basil/li
li2 tsp fresh oregano/li
li2 tsp fresh thyme/li
li1 tsp dried rosemary/li
li6 mushrooms/li
li1 small zucchini, cut in 1/2-inch slices/li
li1 small onion, cut into small wedges/li
li1 medium red or green bell pepper, cut into 1-inch chunks/li
li4 cherry tomatoes/li
li1 small yellow squash, cut in 1/2-inch slices/li
li3 tsp light soy sauce/li

liCut filets into 1 1/2-inch pieces and place in a small bowl./li
liWhisk together the oil, lemon juice, basil, oregano, thyme, and rosemary and pour over the fish, tossing gently to coat./li
liCover tightly and marinate in the refrigerator for 1 hour./li
liPreheat the oven to 400 degrees (alternatively, this recipe can also be cooked on the grill)./li
liRemove the fish from the marinade and discard the marinade./li
liCombine all the vegetables and steam lightly for about 3 minutes./li
liAssemble the kabobs on 4 skewers, alternating fish and vegetable pieces as desired./li
liSpray the rack on a broiler pan with cooking spray and place the skewers on the rack./li
liBake for 6 minutes. Turn the kabobs and bake for 6 to 7 minutes or until the fish flakes easily with a fork./li
