pEMYeast Free Chicken Supreme Recipe from the diabetic recipe collection at InformationAboutDiabetes.com/emIngredients: /pP4 boneless chicken breasts1/2 lb fresh spinach1/3 cup slivered raw almonds, toasted2 cl fresh garlic, minced, =or=-1 1/2 tsp bottled4 tsp onion, finely minced1 tbsp linseed oil1/2 tsp oregano1/2 tsp salt2 cup uncooked brown rice4 1/2 cup water, or soup stock1 freshly ground pepper to taste2 tbsp fresh parsley, chopped/pPreparation: PPreheat oven to 350F. Remove skin from chicken breasts. Wash spinach,remove stems and discard, tear leaves into small pieces. Mix spinach andnuts together. In wok or large akillet, stir fry the garlic and 2 tsp ofthe minced onion in the oil. Add spinach, nuts, oregano and salt, andsaute 2-3 minutes longer. Remve from heat and let cool. In a 10x13 inchbakin gdish, place uncooked rice and water or soup stock. season witpepper, add remaining minced onion, and parsley. sEt aside. Spread chickenbreast out flat. Pound lightly. Fill each with an equal portion of spinachmixture. Roll up and secure ends with toothpicks. Place rolls evenly overrice in baking dish. Cover with foil.
