Cauliflower, Bacon Blue

pPutting some of my favorite things together to make a totally new dish is so exciting. Sometimes it does not work. Other times, like here, the finished product is greater than the sum of its parts. /p
pThis is a great side dish for a bland protein as it adds a great “pop” to the plate./p
pIf you think you HATE blue cheese, try this with cheddar or better yet, Swiss cheese./p
h2INGREDIENTS:/h2
ol
li1 head of cauliflower (about 3-3 ½ cups)/li
li1 medium onion, sliced thinly/li
li2 tbsp. butter/li
li2 cloves garlic, grated or minced very finely/li
li3 tbsp. sour cream/li
li2 ounces blue cheese, crumbled/li
li6 slices of crisp bacon, crumbled/li
li½ cup whole milk/li

h2HOW TO PREPARE THE RECIPE:/h2
ol
liPreheat over to 350°./li
liCut cauliflower into 1 inch florets./li
liSautee the onion in the butter until lightly golden brown./li
liTurn off the heat and add the garlic. Allow to cool slightly./li
liAdd the bacon, blue cheese, pepper, and sour cream./li
liCombine with the cauliflower and pour into an oven proof dish./li
liAdd the milk, cover with foil and bake for 20 minutes./li
liRemove the foil and bake for 15 more minutes until lightly brown./li

If you like your vegetables softer cook for another 5-10 minutes./p
