Lemon Shortbread Cookies

Yields 16 cookies

Ingredients

  • 6 Tbsp butter
  • 2 cups almond flour
  • 1/3 cup granulated sweetener (Splenda, Swerve, etc.)
  • 1 tsp freshly grated lemon zest

Preparation

  1. Preheat the oven to 350 F and grease or line a cookie sheet with parchment paper.
  2. In a small saucepan or the microwave, melt the butter. Add the remaining ingredients and mix until everything is fully combined.
  3. Form the dough into a cylinder and wrap it tightly with plastic wrap. Chill the dough in the freezer for 30 minutes or in the refrigerator for 2 hours.
  4. Using a sharp knife, slice the dough into 16 1/2 inch thick cookies.
  5. Bake for 15 minutes or until the cookies are firm and golden brown. Allow them to cool.
