Smashed Potatoes

li1 lb red new potatoes, washed and quartered /li
li4 garlic gloves, peeled/li
li1/2 cup fat-free half-and-half, heated /li
li1/2 tsp salt (optional) /li
li 1/4 tsp ground black pepper/li

h3Preparation/h3

li Add potatoes and garlic gloves to a large soup pot. Cover with cold water and bring to a boil. /li
li Cook for 20 minutes or so until potatoes are soft. Drain and return to pot./li
li Add remaining ingredients, and using a potato masher or sturdy whisk, smash potatoes and garlic until blended but still lumpy. /li
