Mushroom-Garlic Toast
Serves 4
Ingredients
- Cooking spray
- 1 cup sliced fresh mushrooms, rinsed
- 2 medium garlic cloves, minced
- 1 tbsp minced fresh thyme
- 1 tbsp water
- 1/8 tsp pepper
- 4 very thin slices whole-wheat bread, halved diagonally
- 2 tbsp shredded or grated Parmesan cheese
Preparation
- Preheat broiler.
- Coat a medium skillet with cooking spray. Add mushrooms and garlic; cook over medium-high heat for 2 minutes. Add thyme, water and pepper; cook another 2 minutes or until mushrooms are tender.
- Arrange the bread triangles on a baking sheet. Broil one side of the bread until toasted. Turn over. Broil the other side until toasted. Remove from the oven.
- Put the mushroom mixture over each toast, then sprinkle with Parmesan.
- Broil toasts until Parmesan melts. Serve hot or warm.
