Grandma's Chicken Soup

Chicken soup without noodles does not seem right. I use a mung-bean based fettuccine (broken into noodle-size pieces). For the cooked chicken, you can use a rotisserie chicken or any cooked leftover chicken you have available.

This recipe is designed for the home cook who does not have the time, pot or freezer space to make the broth from scratch.

I put the fresh vegetables in as the soup cools and then they only cook while reheating the soup. If you like your vegetables softer, you can add them into the soup 10 minutes into the simmering process.

This makes a great hearty “meal” soup while holding the carbohydrate level way down.

Ingredients

  • 1/2 medium onion, sliced thinly
  • 1 Tbsp vegetable oil
  • 1 large clove garlic, minced
  • 1/2 pound cooked chicken, shredded or cut into bite-size chunks
  • 32 ounces low-sodium chicken stock or broth
  • 1 Tbsp fresh dill, chopped (or 2 tsp dry)
  • 3 Tbsp fresh parsley, chopped
  • Salt and pepper to taste
  • 1 medium purple turnip, peeled
  • 2 medium carrots
  • 2 stalks celery
  • 1 cup fresh (or frozen) green beans
  • 1/2 cup bean-based fettuccine

Preparation

  1. Cook the onion in the vegetable oil until just wilted but not browned. Add the garlic and stir to combine. Add the chicken, broth or stock, dill, parsley, salt and pepper. Simmer for 20 minutes.
  2. Cut the turnip into large (3/4-inch) chunks and add to the soup 10 minutes into the simmering process.
  3. Slice the carrots and celery into similar-sized pieces (about 1/2-inch thick).
  4. After 20 minutes of simmering, remove from heat and allow to cool. When cool, add the carrots, celery and green beans.
    Refrigerate over night.
  5. Cook the fettuccini according to package directions. Drain, rinse and set aside.
  6. Bring the soup to a boil. Add the cooked noodles and bring back to a boil. Turn off the heat and serve piping hot.
